Naturally-Leavened Whole Grain Breads

My favorite breads are made by my friend Eduardo Morell and sold at the Ecology Center's Saturday Farmers' Market in Berkeley. Come between 10 am and 12 noon because he sells out. He calls his bread Morell's Bread.

Grindstone Bakery is another fabulous source for naturally-leavened, organic whole-grain breads. Baker Mario Repetto is completely committed to nourishing traditional breads and is a member of the Weston A. Price Foundation. He makes delicious loaf breads from spelt, rye, and kamut flours--including the outrageous "Espresso al Cioccolato" (coffee and chocolate)--for those of us who aren't averse to stimulants! There are also pita breads and even gluten-free breads available. Grindstone Bakery products are available at Rainbow Grocery, Berkeley Bowl, and many other local markets. I also love Brickmaiden's whole wheat bread - available at the Ecology Center's Tuesday Farmers' Market in Berkeley.

Also wonderful is Della Fattoria's wholegrain bread - 90% wheat and 10% rye, sold at Della Fattoria's stand at the Ferry Plaza Farmers Market in San Francisco on Saturday morning. They also have wonderful naturally leavened breads made with a combination of whole wheat and some white - try the Levain - or with cornmeal - try the polenta.

I also love Anna's Daughter's Rye bread. Brickmaiden sells it at the Tuesday Berkeley Farmers Market. It is also available by mail order.
