Holy Mole Posole

Ingredients:

  • Cook soaked hominy in plenty of water until tender.
    (click for info about iroquois white corn, the hominy I used for this recipe)
  • Saute onion in olive oil, add oregano, marjoram, cumin, a pinch of cloves, cinnamon, and cayenne.
  • Add the cooked hominy to the saute along with plenty of diced tomatoes.
  • Add a few finely snipped ancho and chipotle peppers and a bay leaf and bring to a simmer.
  • Cook about 20 minutes or so, then begin adding salt, a bit of brown sugar, and unsweetened dark chocolate to taste.
  • Add a few drops of vanilla extract if you dare.

Eat with lots of good grated cheddar cheese, over rice, perhaps.
